Turkey Roll-Ups

These have easily become my favourite savoury snack. They take 30 seconds to make and are packed with protein to tie you over until dinner or fuel your workout. I also love the fact that you can mix and match the hummus flavour and veggies so you do not get bored of the same snack.

My favourite combos are:

Roasted garlic hummus with bell pepper and spinach

Red pepper hummus with zucchini and arugula

Original hummus with carrots and cucumber + sesame seeds

You can also cut these into four or five pieces and eat them like suchi! This is a really fun way for kids to eat healthy snacks and teach them how to use chopsticks. I remember when I was little, my parents use to fold up some newspaper or cardboard and secure it between the end of chopsticks with an elastic band. It would keep the sticks together but also allow my brother and I to open and close them. It was a good intro to chopsticks and it made meals super fun. I would always compete with my brother and try to pick up more things than him and scoop more rice.

Turkey Roll-Ups

Ingredients

4 slices turkey breast (organic, free-range if possible)

3-4 tbsp hummus

½ cup spinach

½ bell pepper - cut into thin strips

Directions:

  1. Spread ~1 tbsp hummus on each turkey slice. Top with ¼ of spinach and ¼ bell pepper and roll up.

  2. Eat as is or cut into 2 or 4 pieces. Sometimes I will cut into “sushi” and eat with chopsticks.
