Cauliflower Ghost Poppers

Halloween is a special time for me. My birthday is mid-October so I often has Halloween themed bithday parties filled with spooky food and funny costumes. One birthday we did a Fear Factor theme and my mom set up “brains” with cold spaghetti and “eye balls” with boiled eggs and we had to feel all these foods in the dark. So needless to say, spooky foods have been ingrained into me from a young age. These are a little less spooky than brains, but definitely party approved for your adult friends. These are keto-friendlt, low carb and a good way to sneak veggies into you potluck party.


This recipe does take a little longer to make than others, so I like to premake them on the weekend when I have time and freeze them until halloween. You can use any cookie cutter Halloween shape you can find to use as a mold and decorate accordingly. I only had a skull and then I free-handed the ghosts. It helps a little but to wet your hands when shaping them so that you do not stick to the cauliflower mixture. Feel free to decorate with other toppings like sundried tomato pieces, bell pepper or other vegetable pieces if olives and capers are not in your palate.



Cauliflower Ghost Poppers


1½ cups cauliflower - riced, cooked and water squeezed out
2 tbsp ground flax seed
1 tbsp arrowroot powder
¼ cup grated white cheese or goat cheese
1 tsp basil
1 tsp oregano
½ tsp sea salt
¼ tsp black pepper
1 egg

Directions:
1. Preheat oven to 350F.
2. Combine all ingredients except egg in a large bowl and mix to evenly distribute.
3. Add in egg and mix well.
4. Use a cookie cutter to make a mold or just shape into ghosts/ skulls. Use olives, capers or whatever other food item you like to decorate.
5. Bake for ~30 mins. Let cool and enjoy with pizza sauce or roasted red pepper sauce.
