Vegan Salted Caramel Protein Bars

I am always on the hunt for the best protein bar recipes. I like to have bars on hand for when we are on the road, slopes or trails, to make sure we are properly fuelled and feeling good. I have a hard time buying bars that I know I can make at home with cleaner ingredients and I find it hard to find a super filling protein bar that is very clean. Another factor is waste. When on the trails, I do not like to see garbage of any kind out there and if you make your own protein bars, you can guarantee that the container you pack them in is eco friendly. I wrap individual ones in beeswax wraps for easy storage and access or on the road, I just store in a reusable container.

I have also experimented with many different types of protein powders to put into bars and the Vega Salted Caramel + Greens has won me over in terms of flavour. I personally do better with a paleo based protein powder digestively, but this is a great one to add into baking if you tolerate pea protein. I have made a variety of protein bars with this powder and turned many close friends onto homemade bars over store bought ones. As a bonus, they do contain greens like spinach, kale, alfalfa and broccoli to add vitamins and minerals during exercise and antioxidants to help with muscle recovery. Vegan Salted Caramel Protein Bars

Ingredients:

1 cup dates - soaked min 1 hour

1 cup walnuts

¾ cup GF oats

¾ cup shredded coconut 

3 scoops vega salted caramel protein + greens powder

⅓ cup honey

2-3 tbsp mini vegan chocolate chips 


Directions:

  1. Place soaked dates and walnuts in the food processor and pulse to break down.

  2. Add all remaining ingredients except chocolate chips and blend on high for ~60 seconds. You should be able to pinch dough together and have it stick.

  3. Press into an 8x8 dish and top with chocolate chips

  4. Bake at 250F for 25 mins.

  5. Let cool and cut into bars. Enjoy!
