One Pot Pasta

To be honest, I have never made one-pot pasta before this and I don’t know WHY! It is super easy and cooks in 25 minutes. And it’s a large portion, so you can have meals for a few days, its revolutionary. I did a few healthy change-ups from your regular one-pot pasta to kick up the nutrition.

  • I subbed quinoa pasta for regular pasta to increase protein and digestive stress (I do not tolerate gluten very well)

  • I added in some extra veggies for vitamins and minerals

  • I used just a sprinkle of lactose-free cheese on top to get all the flavour without all the added fat


These are a few is a general rules to make a recipe a little healthier and this way you can have your favourite recipes, but healthier.

Easy One-Pot Chicken Pasta

Ingredients

2 tsp olive oil

1/2 cup purple onion - diced

2-3 cloves garlic - minced

2 cups mushroom - quartered

1 (19oz) can diced tomatoes

1 sm can tomato paste

3 cups quinoa pasta

4-5 cups water or broth

2 cups shredded chicken

1/4 cup sun-dried tomatoes - diced

1 tbsp basil -dried (or 1/4 cup fresh)

1 tsp dried oregano

2+ tsp sea salt

1 tsp black pepper

4 cups spinach

1/2 cup white cheddar or mozzarella - shredded

Directions

  1. In a large pot or dutch oven, heat oil on medium heat. Add in onion and saute for 3-4 minutes. Add in garlic and mushrooms and saute another 1 min.

  2. Add remaining ingredients, except spinach and cheese and bring to a boil. Simmer for ~ 20 minutes or until pasta is almost cooked.

  3. Stir in spinach and top with cheese. Turn off heat and cover pot to let sit for 5 mins or until the cheese is melted.
