Mini Turkey Meatloafs

I am always looking for healthy freezable recipes. I have been caught SO many times without anything to eat at home and I do not want to eat out and end up feeling terrible the next day. It is usually the nights that I have been running around all day and I have company in town, or when I go straight from work to a sport and don’t get home until 8pm. It is these days when it is super crucial to have a few meals in the freezer. One of my go-to’s is homemade freezer burritos and the other one is these mini meatloaves. These do require a thought in the morning just to move them from the freezer to the fridge so that they are thawed by the time you get home. Then all you have to do is re-heat and eat!

I like these specifically because they are very high in protein so you will be full and not be reaching for calorie dense sweets at the end of the night. They are also great for athletic kids and families to get in the extra protein before or after sporting events. Since they are pre-portioned, it makes it super easy to take out exactly what you need when you need them. For example, your youngest may have one meatloaf, where your spouse may have three. It makes it very easy to portion meals when pulling them out of the freezer, rather than trying to look at the weight of the ground meat you are making and how much you will need per person etc.

Another bonus of this recipe is that it is very easy to make. You can mix and match some herbs of you like, but all you really need it dried herbs, onion, garlic and oats/ oat flour. Most people have all of these on hand at all times, so if turkey is on sale, load up and loaf up!

Mini Turkey Meatloafs

Makes 6

Ingredients

1 lb lean ground turkey

1/3 - 1/2 cup oat flour (or quick oats)

1 free-range egg

1/4 cup spinach - chopped

1/4 cup onion - finely chopped

1 clove garlic - minced

1 tsp dried dill

1 tsp dried oregano

1 tsp sea salt

1/2 tsp black pepper

Directions

1. Preheat oven to 350F.

2. Combine all ingredients in a bowl. Add more oat flour if your turkey is high in moisture.

3. Portion into 6 greased or silicon muffin tins and bake for ~25 minutes or until internal temperature is 165F.

4. Let cool completely before freezing.

**To reheat: let thaw (place in fridge in the morning so they are thawed when you get home) and microwave for 2-3 minutes or bake at 375F for 18 mins.
