Cranberry Oat Energy Balls

These energy balls are super easy to whip together and the perfect snack for next adventure. They have a great mix of protein, carbs and heathy fats to keep you fuelled. I like to wrap up a couple of these in a small beeswax wrap and put it in my pocket when were are at the ski hill or out touring in the backcountry.

My favourite nut butter right now is hazelnut butter so the photos shown here are made with that. However, any nut or seed butter will work well and if you have a nut allergy in the family, opt for the sunbutter. If you waned to pump up the protein even more, reduce the amount of oats slightly and add in your favourite protein or collagen powder.


Cranberry Oat Energy Balls

Ingredients:

1 cup dates

1 cup oats

½ cup almond butter (or hazelnut, peanut or sunbutter)

2½ tbsp honey

1 tsp vanilla extract

½ cup dried cranberries

3 tbsp chia, flax or hemp seeds (or a mix)

Optional: pistachios - chopped

Directions:

  1. Place dates, oats, nut butter, honey and vanilla in a food processor and blend until dates are broken down ~30 seconds.

  2. Add in cranberries and seeds and pulse to combine. ** Add more honey or nut butter if dough does not stick together, it all depends on how fresh your dates are and how runny the nut butter is.

  3. Scoop/ roll into 1 inch balls and top with chopped pistachios, if using. Enjoy!
