Squash Fries

Every year I grow something new in the garden and this year I tried something called sunny delight squash because the name is amazing! I was expecting something like a yellow zucchini in shape but they ended up being shaped kind of like the sun and kind of like a gourd. The name makes a lot of sense now that I see them, however they are strange looking. So now I have a bunch of weird shaped squash and I have given some away to friends and they all ask me “what do I do with this?”. I feel like people see a weird shape or colour of vegetable and they think it’s come from Mars. But it is essentially just zucchini’s ugly brother and can be used the same. You can bake it into cakes and muffins, roast it, BBQ it or try these tasty low-carb squash fries.

Keto Squash Fries

Ingredients

1 yellow squash - cut into strips
1 cup almond flour
1 cup parmesan cheese
2 tbsp fresh basil and oregano (or 2 tsp dried)
1 tbsp arrowroot powder
1/2 tsp salt
1/4 tsp black pepper
1 egg
1 tbsp water

Directions:

1. Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
2. In a food processor combine almond flour, cheese, spices, arrowroot powder, salt and pepper and pulse until fine.
3. Beat the egg and water in a small dish.
4. Dip the squash strips into egg them into the almond flour mixture and lay on the baking sheet (not touching)
5. Bake for ~25 mins or until the outside is crisp. Let cool slightly and enjoy!
