Nectarine Salsa

It’s nectarine season! I usually like to enjoy my nectarines with a bib, but today I was feeling something a little more savoury.

This salsa is super easy to make and a very healthy addition to your dinner. I paired mine with masala baked chicken, cumin roasted cauliflower, black beans and spinach. Leftovers would pair very well with pita chips for a sweet and salty snack or appetizer. This salsa would be a great addition to an end-of-summer potluck because it’s a little different than your standard pico and uses seasonal ingredients.

Nectarine Salsa

1 large nectarine - diced

½ small red onion - diced

½ yellow bell pepper - diced

1 lime - juiced

1 hot pepper - minced (I used banana pepper but jalapeño would be great too)

3 tbsp cilantro - chopped

2 tbsp mint - chopped

Salt to taste

Pinch of pepper

Mix in a small bowl and enjoy!
