Low FODMAP Vegetable Broth

One of the hardest things to sub out on the low fodmap diet is vegetable broth because most of the ones you buy in stores contains onion and garlic - which are not allowed. If you are doing the low fodmap diet, I recommend making a large batch of this broth and freezing some for later use. You can also mix and match some of the fresh herbs and root vegetables depending on the season. I still have sage and thyme kicking around in my garden and these are both warm, comforting herbs. These two herbs are also very soothing in the body and can make SIBO and GI upset lesser.

Low FODMAP Vegetable Broth

Ingredients

2 tsp garlic or onion infused oil

1-2 carrots

1-2 parsnips

1 stalk celery

1 leek - greens only

1 bunch scallions - greens only

2 tsp peppercorns

1/4 cup fresh sage leaves

1/4 cup fresh thyme sprigs

1 tbsp sea salt

4-5 L water


Directions:

  1. Heat oil on medium heat in a large pot. Chop carrot, parsnip and celery into large chunks and add to pot.

  2. Add in remaining ingredients and bring to a boil. Then turn down heat and simmer for 1-2 hours.

  3. Strain liquid and use right away or freeze for up to 4 months
