Rosemary Spinach Dehydrator Crackers

I like to have seed crackers on hand for quick and filling snacks or to add a carby feel to a meal. I encountered a rather large amount of rosemary and I have been experimenting with just how many things I can sneak it into. I do LOVE rosemary luckily and it has great medicinal properties as well. It is an antioxidant, anti-microbial and anti-inflammatory, it also is known to help improve memory. As many herbs are, it is packed with nutrition and micronutrients like vitamin A, C, manganese, iron, magnesium, potassium and B-vitamins that keep your body healthy and strong. Rosemary essential oil is used for cleaning due to its antiseptic qualities and for healing from sickness for its anti-microbial properties. Just smelling the essential oil has also been linked to improvements in mental performance and faster memory retrieval. Consuming this wonderful herb boosts your health even more! Or give it a smell to feel grounded and calm with its comforting aroma.

Rosemary Spinach Dehydrator Crackers

Ingredients

1 cup ground flax

¼ cup chia

2 tbsp psyllium ground

¼ cup hemp seed

1 cup packed spinach - finely chopped

1 lg clove garlic - finely chopped

¼ c white onion - finely chopped

¼ cup tomato - finely diced 

3 tbsp rosemary leaves - finely chopped

1 tsp sea salt

1 tsp black pepper

2 tbsp nutritional yeast - optional

1 tbsp apple cider vinegar

1½ cup water - warm

Directions

  1. Combine all ingredients except water and ACV in a mixing bowl and mix until evenly distributed

  2. Add in ACV and warm water and mix thoroughly. Let sit for 2-5 minutes to firm up

  3. Spread onto dehydrator sheets in cracker round. You can make them as large or as small as you want, the smaller they are the less time it will take to dehydrate

  4. Set at 50ºC for 16-20 hours depending on the size of your crackers

  5. Enjoy with hummus, salad or on a charcuterie board
